Stacy's Kitchen- Dinner 2 RESULTS

Oh where, Oh where do I even begin..... haha! Well let me first start off by saying, I was so excited for this meal. Brian just LOVES chicken pot pies and he is such a lover of sweets! I just KNEW he was going to like it! What I did not realize is how much I was NOT going to like making some of it! lol! Ill elaborate later.... haha
Chicken Pot Pie
This was an AMAZINGLY easy and Yummy dish! I am not usually a fan of "pot pies" mostly because I've only had the frozen ones! haha! Well B loves loves loves them... so I would only buy the cheap-o 75 cent ones and would eat a sammie for dinner while he ate a pot pie! lol! Well I am so happy I found this recipe! I did do some minor changes, who would have thought?! I boiled two boneless skinless chicken breast. As those were cooking, I saute some fresh mushrooms in a tsp of olive oil. After the mushrooms were cooked I added in some cooked veggies (I just bought a bag of frozen mixed veggies). Added some dried minced onion, dry garlic and wine seasoning, oregano, and basil. After the chicken was cooked I cut it up and threw it in with the veggies to coat it with the seasonings. Then I mixed in 1 can cream of chicken soup with 1/2 can cream of cheddar soup. Threw it in a casserole dish and topped it with the bisquik mixture (which i added some paprika, and garlic powder to... just to give it some flavor).   Cooked it according to the recipe and it came out FANTASTIC! I can no longer say "ewww" when I talk about pot pies! haha! I have officially switched over to the "pot pie" eating side!




Red Velvet Whoopie Pies


Ohhh gracious, where do I even begin with these? I am someone who loves to cook and bake and do all things in the kitchen but my goodness these little puppies took FOREVER to make! First, I am sure I used every single cooking dish in my house.... literally! I had to start my dishwasher just so I could have enough room for the dishes from the dessert. Then my arm seriously felt like it was going to fall off or my whisk was going to break in half mixing the dough. Everything was done by hand, except for the froasting.

...45 minutes later, the cookies/whoopie pies are ready to go into the oven. Ummm lets just say this, my "little" pies came out looking like huge saucers! So the 2nd batch I halved the amount of dough I put in each cookie... umm yeah the 2nd batch still came out looking like saucers, just alittle prettier I guess! (see last picture) lol. So at this point, 1 hr and 15 min into this recipe, Im thinking maybe I am just being bias because of the time length. I kept trucking through it because, by golly, I spent this much time on them they better came out tasting golden!

Now onto the filling/froasting.... I did my own variation of the filling due mostly to my own person preference of not caring for cream cheese froasting. So I did a cinnamon buttercream froasting, which consists of 1 stick salted butter, 1/2 stick crisco, 1 tsp vanilla, 1/2 bag of powder sugar, 2 tsp cinnamon, then milk for thining to consistency you desire. It was yummy so I thought shoot these are going to taste YUMMY now.....

So I arrange all my little saucer/cookie/pies with the froasting, and yes that part was piece of cake... BUT then you have to refrigerate for 30 MORE MINUTES! Grrrr! So i put those bad boys in the fridge knowing they just HAVE to taste delicious with all this hard work....


umm...yeah lets just say I was not impressed and well B couldn't taste test it bc he went to BED! lol! Yes, these little guys are definitely time consuming.. maybe I totally just bombed this recipe! I had to have done something wrong bc they were not that good! Like we have mention in several posts, Lynnette is our baker (I think I need to get a lesson from her) but from a person who loves to cook, this recipe was HARD and so not what I thought the end results were going to be. They were cakey blah little cookies with froasting in between. Ohh and total side note.... this is not a dough you would want to lick the spoon on... the dough was yucko! And yes, licking the spoon is one of my favorite parts of cooking sweet treats so i was bummed! hehe! If you are a Baker or if you have enough guts... I say try this.... I must have messed up somewhere but i actually did follow this recipe to the "t," minus the froasting. Trust Lynnette, she is a fantastic baker... but I just couldn't hack this recipe! booo! =(

All in all, this meal was an "adventure" to say the least! haha! Chicken pot pie is a definitely Keeper! The Velvet whoopie pies...ummm i need a tutor! haha! Hope you all enjoy your weekend and I hope you join us for our NEXT ADVENTURE this week!!! :)

I talked to Lynnette, our "baker", in depth about my disasterous whoopie pies... here is what Ive concluded... 1- use a small ice cream scoop or melon scoop when you put the dough on the cookie sheet and dont forget to smooth the tops, 2- use a wooden spoon instead of a whisk when mixing the wet and dry ingredients together (save your arm! lol) then as for the taste, follow the recipe and hopefully they taste like lynnette's and not mine haha! If yall try them, let me know how they turn out and if you have any other suggestions to make them! :)
