Lynnette's Dinner 2 Results

Okay, so yes.. We chose a pretty easy recipe this week. Well I too tend to deviate from a recipe. I found that the Chicken Pot Pie was a great "Base Recipe" to be able to do some creative changes to it.. :) 
For the Chicken Pot Pie, I substituted the cream of chicken soup with cream of mushroom. I also used a frozen mix of corn, carrots and asparagus and added sauteed portabello mushrooms. :)  We can't eat green beans in our house as Bean is very allergic to them! So I had to find veggies that were edible in our house! :)
Let me tell you, it was DEVINE!!! Well, that is if a Chicken Pot Pie can be.. I will make this again FOR SURE! Bean loved it! Ry loved it! And my friend Becky did too! ;)

This is a recipe to keep, and have fun with! It is pretty true to it's name of being the impossibly easy Chicken Pot Pie! :)


For dessert.. where do I begin.. These are a little time consuming.. but oh' so worth it!
To test this recipe, I had Ry help me. To see if "anyone" could put it together! lol! He did great! It does have quite a few steps. There are a few tips that I would recommend when baking these Yummalish Whoopie Pies:

* keep the Baking soda and apple cider vinegar aside, do not mix them as the directions suggest. Just as you are combining the wet ingredients, mix the baking soda and the apple cider vinegar together in a small bowl. Let them "do their thing", and then add it to the wet ingredients.
This will help the cookies to bake up and be super fluffy! :)

* Also, when baking your cookies you want to be sure to not over cook them. If you do, they will be like little red velvet hockey pucks! When your cookies start to puff up in the oven, just touch the top of one cookie, if it springs back or begins to, then pull them out of the oven! Be sure to place them on a cooling rack right away. They will continue to cook if you don't.

These Red Velvet Whoopie Pies were oh' so yummy! To quote Becky "they are the perfect mix of flavor and sweetness" :) So with that said, I will make these again!
I will keep this recipe as well, in fact, I intend on making them for Bean's school staff for Valentines day!
